I have been looking to get some new kitchen knives. I have found that you should look for a high carbon stainless steel and a full tang. I found two sets on sale at my local Herberger’s. The first set comes with more pieces, but is less expensive… can anyone see a reason that the second set would be more expensive?

My suggestion is to forget about the sets. In all reality, most of the time you will use a large chef’s knife, and a paring knife. I see the rest of the set as filler. Visit a local restaurant supply store and you can pick up both of these-probably with better quality- for less than the set costs. Unless you regularly make fresh bread or fillet whole fish, it probably won’t be necessary to get these othe knives.

one is the "insignia", the other is the "metropolitan"
maybe one is higher quality? (although they do look the same from the picture) and they’re pretty close in price. maybe the blades are a bit different?
the last one is "insignia" but has stainless steel handles (obviously!)
Set 1 has 5" partoku, 7" santoku, and 9" scalloped knife, but no chef’s knife, the most widely used knife you’ll find. The scalloped knife is great for bread, and will have various other uses down the road. I don’t like the feel of santoku and partoku knives – I rarely use them. They require you to slice in a manner that I don’t feel is comfortable.
Set 3 looks interesting, but the silver handles become a bit slippery with use.
Set 2 looks the best to me, with the included 8" chef’s knife. The rest of the set is solid, but the steak knives are gimmicky. These are high quality, ergonomically balanced, high-carbon steel knives. They are reasonably priced, and at home, they’re accessible in the storage block – no digging in the drawers.
I think you’ll be happy with set 2.
