What style kitchen knife would you recommend if I can't afford a whole set?

When I went to the store or to cutlery websites, they had kitchen knives such as paring, chef’s (various lengths,) utility, santoku, slicing, boning, bread, carving, bird’s beak, and more. Which knife is the most versatile? What brand do you like? What is good steel for kitchen knives?

What’s the difference between these kitchen knife sets?

I have been looking to get some new kitchen knives. I have found that you should look for a high carbon stainless steel and a full tang. I found two sets on sale at my local Herberger’s. The first set comes with more pieces, but is less expensive… can anyone see a reason that the second set would be more expensive?

Type of kitchen cutlery starts with an m? more detail inside?

I cant remember what its called I saw it on an infomercial for a collection of kitchen knives it starts with an M its something like mesomie or something it kind of reminds me of a cleaver only the blade continues along the handle and reconnect at the bottom protecting the handle area
I drew it the best I could on MSPaint, the black part is the handle.
